Liver is one of the most nutritious meal.It contains protein and micronutrients such as vitamin B12, vitamin A, riboflavin, copper and iron.Protein is very essential in the human body since it is required to make and repair cells, also turn food into energy.Its nutrients help to prevent anaemia especially iron and riboflavin. Vitamin B12 works with folate in the body in production of DNA and red blood cells.
1/2Kg of Liver.
1 Chopped onions.
Chopped coriander leaves.
1 Tablespoon of salt.
2 Royco cubes.
1.Wash the chopped pieces of liver and place it in the sufuria to drain water.
2.When it's dry, add desired amount of cooking oil.
3.Add the chopped pieces of onions as you stir till the onions turn brown.
4.Add chopped tomatoes and you stir the mixture until the tomatoes soften.
5.Add 2 Royco cubes and 1 tablespoon of salt and stir.
6.Add chopped coriander leaves and stir the mixture then cover and leave it to simmer for about 10 minutes.
Serve it when still hot.Liver can be served with ugali or rice.
This is enough for atleast 4 people.
