Treat Your Loved One This Valentine's With Chicken Biryani(recipe)

Biryani is one of the most delicious meals introduced to Kenya by Indians. It's considered a luxurious treat in parties and occasions.


chicken pieces

3 tablespoon of plain yoghurt

1 and a half tablespoon of ginger garlic paste

1 tablespoon of biryani masala

Half teas spoon salt

1 teaspoon of red chill powder

half tablespoon of ground Tumeric

1 Tablespoon of lemon juice(optional)


1.Put the chicken pieces on a large bowl then add all of the above ingredients.

2.Mix everything well then marinate the chicken for at least 1hour. You can as well keep it in the fridge or the whole night.

3.As you wait for the chicken, put 2 cups of rice(your favourite brand) on a large bowl and rinse it well. Drain and leave it for at least 30minutes. Then sock it in freshwater for 30minutes ant drain it again.

Preparing "Rojo".

1.heat oil on a large sufuria and add the following spices if you can get them:

4green cardamon

1innamon piece

6 Cloves and any other whole spices of your choice.

2.Add sliced onions and stir them until uniformly light brown

3.Add marinated chicken and continue stirring until it becomes pale.

4.Add salt and cover the sufuria. lower the flame to give the chicken time to soften and become tender.

5.Make sure the chicken is just cooked and not overdone. Open the lid to allow excess moisture to evaporate.

6.Taste salt. if it's okay, add;

half cup of yoghurt

1 teaspoon of biryani masala

half teaspoon of red chill powder

2tablespoon of chopped mint leaves

7.Mix everything well and spread it evenly in a single layer.

8.Level the drained rice on top of the chicken and add 2cups of water. You can add more mint leaves if you feel like.

9.Cover the sufuria well and ensure the flame is at medium, not to harry your biryani. The amount of water added depends on the quality and quantity of rice you are using. Give it time to dry, the safe way you prepare rice.

10.Finally your biryani is ready. Open the lid and give it time to cool.

Serve chicken biryani in layers to ensure the chicken and rice are evenly distributed.
