How to make a Tasty Madondo Stew with Chapati

Madondo is a Kenyan hearty dish that is delicious, tasty, healthy, and very easy to prepare. Madondo is mostly enjoyed with chapati and especially in Kenyan roadside kiosks famously called Chapati Dunga, (simply chapati rolled and pierced with a fork). It is a super filling dish one serving can last you for a day!

Ingredients

2 cups beans, boiled

2 garlic cloves

1/4 teaspoon garam masala

1 bunch Corriander

2 tomatoes, chopped

salt to taste

cooking oil.

1 carrot, peeled and sliced

spring onions.

Process

1, Sort your beans and soak them overnight in lukewarm water and boil them until they are tender and put aside.

2, Fry the onions till they are golden brown, then add the ginger paste and tomatoes.

3, Once the tomatoes are dissolved add garam masala, salt, carrots, stir until everything is thoroughly combined.

4, Simmer for 10 minutes after adding water.

5, Remove from heat and garnish with coriander.

6, Serve with chapati or rice.
