How to make a Yummy Wet-fried Omena with Ugali and Sukuma

Omena is a celebrated dish among the Luo community in Nyanza Province in Kenya. Over the years however many communities in Kenya prepare this dish. It is absolutely delicious, yummy, and simple to prepare. It best served with ugali and Sukuma or kales.


1/4 cup of maize flour (250 g)

1/4 kg Omena

2 tomatoes

2 Onions

cubes of green pepper

2 Royco cubes


Oil for cooking

1 bunch Corriander

1 bunch Kales


1, Boil 3 cups of water in a larger saucepan.

2, Stir the maize flour into the hot water until it forms a solid texture.

3, Reduce heat to low and cook for 15-20 minutes. Ugali will be ready to serve.

4, Wash omena with warm water first, then cold water.

5, Dry them in a hot saucepan.

6, In a separate pan, heat the cooking oil and sauté the onion until it golden brown.

7, Combine the omena with the oil and onions and between 2-5 minutes.

8, Add the remaining ingredients, except for coriander. Cook for a couple of minutes last but not least, add coriander and remove the saucepan from the heat and cover it for about 3 minutes to allow the coriander to steam.

It's ready to serve.

9, Kale should be chopped into small pieces.

10, Fry the onions the add kales, add a little bit of salt to taste.

11, Cook for 5 minutes and its ready to serve.
