Matumbo which is known as tripe in English is a type of organ meat made from the edible stomach lining of farm animals such as cows and sheep.A majority of Kenyans relish in eating the stewed or boiled version of a cow/sheep’s stomach lining.

Beef tripe from cows is one of the most commonly eaten varieties. Tripe is normally tough meat that needs to be properly prepared in order to become edible. It’s commonly cooked by moist heat methods, such as boiling or stewing.

Matumbo is a good source of Vitamins such as Niacin (B3), Folate (B9) and Cobalamin (B12). Niacin is an essential nutrient as it lowers the cholesterol levels, eases one's arthritis, helps in treating psoriasis and lowers your risk of developing a heart disease.

Folate is vital as it is needed in making red and white blood cells in the bone marrow while B12 is essential as it prevents megaloblastic anaemia and keeps the body’s nerves and blood cells healthy.
