How to make Soft and Tasty Coconut Mandazi

Coconut mandazi are soft, delicious, and yummy, they grace our breakfast tables. They are just perfect and are to die for. You can take them as a snack or something to crunch any time of the day and are easy to prepare. Coconut mandazi originates from Coastal Kenya.


3 cups of all-purpose flour

1/2 cup sugar

1 1/2 instant yeast

1 tbsp lemon zest

4 tbsp of butter

1 cup coconut milk

1 tbsp lemon zest

4 tbsp grated dry coconut

1/2 tsp salt


1, Heat water and butter put them aside to cool.

2, In a mixing bowl, add flour, yeast, lemon zest, salt, and sugar and mix.

3, Mix both dry and wet ingredients and mix thoroughly with a spatula.

4, Knead with your hands until you get a soft and non-stick dough. Brush the dough with oil set it aside and let it rise for 1 hour.

5, Transfer the dough onto a floured surface, knead again for 5 minutes and roll it into a log shape.

6, Divide the dough into 6 equal parts into balls.

7, Roll the ball outwards into a circular shape, one by one into a thickness of 1 centimeter. Cut into triangle shapes or any shapes you desire using a pizza cutter or sharp knife.

8, Heat oil in a pan on moderate heat, once ready, start to drop the dough pieces one by one gently to avoid spilling the oil, cook till golden brown.

9, Remove from oil and put on a paper-lined container to soak extra oil.

10, Sprinkle your grated coconut and serve hot with tea
