Ingredients:500g beef liver sliced, 1 cup milk, 150g butter, 1 large onion sliced into rings, 1 cup flour, salt and Pepper to taste, b1/2 tspn dried parsley, 1 sprig of coriander leaf (for garnishing).
Method: Wash the liver with cold water and soak it in milk for 15 to 20 minutes (to remove the bitter taste of liver). Half your butter into two and fry your onion until its soft and put it aside. Remove the liver skin (membrane) drainer the milk ,mix flour , salt and pepper,coat the liver with flour and shake excess flour etc. Put butter in a pan and fry the onion if it has melted and lower the heat. Fry the liver until its golden brown. Fry the other side until golden brown and add in some onions till brown, add parsleyand remove the liver do not over cook it.You can serve with ugali, chips or chapati.
