Minced meat with sukuma wiki ( collard greens) is one of Kenya's favorite dishes. It's yummy, delicious, and easy to prepare.
500g minced beef
1 onion, medium size, thinly sliced
2 a large green pepper thinly sliced
Black pepper to taste
2 garlic cloves, slightly chopped
11/2 to 2 tbsp soy sauce
1 tsp tomato paste (flat)
1/4 cup of water
fresh dhania or cilantro
1, Fry the mincemeat till golden in a saucepan... (don't use any oil because if the minced meat is was fatty, but if you're using lean mince, a tbsp of oil is fine.)
2, Drain any leftover oil and set it aside to use in other dishes.
3, Cover the onions in the browned beef cook for a minute to soften them.
4, Then add the garlic and cook until it is fragrant.
5, Stir in the cut green pepper.
6, Add the whisked seasonings: soy sauce and black pepper and stir.
Stir in a little water and the tomato paste, cover, and cook for approximately 5 minutes, or until the water has evaporated and the green peppers have softened. (The meat should be tender and moist.)
Serve with your ugali and Sukuma after adding in some freshly chopped cilantro.
