How to Prepare Delicious Matumbo Stew to Serve With Ugali

Matumbo is one of the best foods to serve with any food of your choice. So today let's learn how to prepare delicious Matumbo stew.

The ingredients;

  1. 1 kg matumbo
  2. Cooking oil
  3. 3 big tomatoes
  4. 2 large onions
  5. Garlic
  6. Ginger
  7. Green pepper
  8. Coriander
  9. Salt

The procedure to follow;

  1. Wash your matumbo(cows intestines)Before cutting.
  2. Put them in a cooking pot
  3. Add enough water and ginger. (ginger softens them)
  4. Cover your cooking pot and let them boil.
  5. When soft, ensure you drain the remaining water in a bowl.
  6. Shallowly fry the cooked matumbo in little oil.
  7. When almost brown, add the onions,galic,corriander,green pepper,and salt.
  8. Fry until the onions turn golden brown, then add the tomatoes.
  9. Allow the tomatoes to soften as you stir.
  10. When you get a thick paste from your tomatoes, your matumbo is ready. Serve with hot ugali.
  11. N/B...I always use fresh spices in my cooking
