Purple Yam Recipe
1 and 1/2 kg of purple yam
2 cups of coconut milk
2 cans of evaporated milk
1 can of condensed milk
1 and 1/2 cups of sugar
50 g cheese
100 g butter
½ tbsp of vanilla
1 tsp of ube extract
Ube Purple Yam
454 grams grated purple yam
1/2 cup condensed milk
1/2 cup coconut milk
1/4 cup evaporated milk
1/4 cup sugar
1/4 cup star margarine
For the Latik:
1 can (400 ml) coconut cream or coconut milk
Note: You can also top it with grated cheese instead of Latik.
This Ube Purple Yam recipe brings back so many childhood memories. One of my favorite dessert for Christmas. I got this recipe from a childhood friend, from her Mom actually.
